Sesame Vegetable Salad














Ingredients

8 oz. chicken breast tenderloins, halved crosswise
Salt and ground black pepper
1 Tbsp. olive oil or cooking oil
8 oz. fresh asparagus, trimmed
8 oz. fresh sugar snap or snow pea pods, trimmed
3 cups watercress, tough stems removed
1 medium yellow sweet pepper, seeded and cut into thin strips
1/2 cup grape tomatoes
1 recipe Garlic Ginger Soy Dressing
1 to 2 tsp. sesame seeds, toasted

Directions

1. Sprinkle chicken lightly with salt and pepper. In a large skillet cook chicken in hot oil over medium-high heat for 6 to 8 minutes or until no longer pink, turning to brown evenly. Remove chicken from skillet and cool slightly; place in an airtight container. Chill at least 1 hour or up to 2 days until ready to serve.

2. In a large saucepan cook asparagus and pea pods, covered, in a small amount of boiling salted water for 2 to 4 minutes or until crisp-tender. Drain; rinse with cold water. Drain well. Serve immediately or place in an airtight container and chill up to 2 days.

3. To serve, in a very large bowl toss together chilled chicken, asparagus, pea pods, watercress, sweet pepper, and tomatoes. Add Garlic Ginger Soy Dressing; toss well. Sprinkle with sesame seeds. Makes 6 servings.

4. Garlic Ginger Soy Dressing: In a screw-top jar combine 1/4 cup rice vinegar; 3 tablespoons olive oil; 1 clove garlic, minced; 1 teaspoon honey and 1 teaspoon soy sauce; 1/2 teaspoon sesame seeds, toasted; 1/4 teaspoon ground ginger; 1/8 teaspoon salt; and dash ground black pepper. Cover and shake well. Serve immediately or store in refrigerator up to 1 week; shake before serving.

This is so easy !!!















Ingredients
Serves 8
1 3/4 cups heavy cream, chilled
1/4 cup sugar
3/4 teaspoon mint extract
1 package (9 ounces) chocolate wafers
1 cup miniature chocolate chips

Directions
1.Make the mint cream: With an electric mixer, beat heavy cream, sugar, and mint extract until stiff peaks form.
2.Line a serving platter with two sheets of wax paper side by side. Assemble the cake: Spread each wafer with about 1/2 tablespoon mint cream, forming stacks. Lay stacks horizontally along seam of paper, pressing gently to form a log. With small spatula or knife, cover log with remaining mint cream. Refrigerate at least 4 hours or up to 2 days.
3.To serve, gently remove wax paper from underneath cake (holding cake in place with a metal spatula, if necessary), and sprinkle with chocolate chips. Slice cake diagonally with a serrated knife.

Okay, they have Oreo's that are no sugar added, hmmm and you can have heavy whipping cream, and then use Splenda and finally chocolate chips from the sugar free isle??? It could work? I'll let you know if it does !! hahaha

Cucumber and Peanut Salad













Ingredients

Serves 4

3 large cucumbers (about 2 pounds), peeled and seeded
1/2 cup roasted unsalted peanuts, roughly chopped
2 tablespoons freshly chopped mint
Juice of 1 lime
2 teaspoons peanut oil
3/4 teaspoon salt
1/4 teaspoon crushed red-pepper flakes

Directions

1.Cut cucumbers into 1/2-inch dice, and place in a medium bowl. Add peanuts, mint, lime juice, oil, salt, and crushed red-pepper flakes, and stir to combine.
2.Set aside for 30 minutes to let flavors meld before serving.

Buttermilk Chicken Salad


A buttermilk mixture makes a dressing and the marinade; you can prep the chicken up to a day ahead.

Bathed in Buttermilk: Low-fat buttermilk gives the chicken zip and tenderizes the meat. The longer the soak, the softer the chicken.

Better Because: Unlike traditional Caesar salad, this one uses no oil in the dressing. Instead, it relies on tangy low-fat buttermilk. Wholegrain croutons also help save on calories and splurge on flavor.

Prep: 15 minutes
Total: 40 minutes
Serves 4


Ingredients


1 1/2 cups low-fat buttermilk
2 tablespoons fresh lemon juice
1 garlic clove, pressed through a garlic press
1/4 cup grated Parmesan cheese
coarse salt and ground pepper
3 boneless, skinless chicken breast halves (6 to 8 ounces each)
2 slices multigrain bread
1 tablespoon olive oil
1/4 cup light mayonnaise
2 medium heads (1 1/2 pounds total) romaine lettuce, cut into pieces
1/2 small head radicchio, thinly sliced


Directions


Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. In a medium bowl, combine buttermilk, lemon juice, garlic, and Parmesan. Season with salt and pepper. Place chicken in a resealable plastic bag; reserving 1/2 cup for salad, add buttermilk mixture. Refrigerate chicken at least 15 minutes and up to 1 day.

Meanwhile, make croutons: Place bread on prepared baking sheet. Brush both sides with oil, and season with salt and pepper. Broil until toasted, 1 to 2 minutes per side; cut into 1-inch pieces (and reserve baking sheet).

Transfer chicken to baking sheet; discard marinade. Broil until opaque throughout, 14 to 16 minutes. Let rest 5 minutes; thinly slice crosswise. In a large bowl, stir together mayonnaise and reserved buttermilk mixture. Add romaine, radicchio, chicken, and croutons; toss to combine. Serve immediately.

This is so sad !!









Do you know one of the only healthy foods I eat even when I'm not walking the line is peas !! I love them, I eat them everyday for lunch !! I love the frozen ones, not those old smashed ones from the can !! They are so good really !! But now my Jailer, oops I mean daughter says I can't have them because they have to much sugar in them !! How wrong is that??? So if you really want to help me, sneak me some peas !! Oh yeah don't tell Hill !!! lol

Any exercise program should include cardiovascular exercise, which strengthens the heart and burns calories. And walking is something you can do anywhere, anytime, with no equipment other than a good pair of shoes.

It's not just for beginners, either: Even the very fit can get a good workout from walking.

"Doing a brisk walk can burn up to 500 calories per hour," says Robert Gotlin, DO, director of orthopaedic and sports rehabilitation at Beth Israel Medical Center in New York. Since it takes 3,500 calories to lose a pound, you could expect to lose a pound for every seven hours you walk, if you did nothing else.

Don't go from the sofa to walking an hour day, though. Richard Cotton, a spokesman for the American Council on Exercise, says beginners should start by walking five to -10 minutes at a time, gradually moving up to at least 30 minutes per session.
"Don't add more than five minutes at a time," he says. Another tip: It's better to lengthen your walks before boosting your speed or incline.

Who wants cake? not me ... Yeah right !!!















I love this picture. Although it is a drawing, it is my goal to look like this happy lady !! She is not too thin and yet svelte, I'd say a very obtainable goal !!!

I made it to day 14 !!!!















Two weeks notice !! I made it and have not cheated once !! I don't even know who I am truly !!! But tomorrow i get to add back all the fun foods I have been missing !!! Whole grain bread and pasta, brown rice and the long cooking oats !! My long range plan is to be thinner when I retire in 19 months !!! But my short range goal is to take it day by day. I have made it two weeks with only protein and vegetables so maybe I can give up real sugar for life?? I have learned to make pancakes with whole grain flour so why not cake or cupcakes or cookies... we'll see !!

Recipes for sliders !!! YUM











I can't wait until day 15 !!! My mouth is doing a dance just thinking about having bread again !!! Can she make it?? Yes, if I post here everyday I will, no one wants to fall down in front of all their friends !! And I don't lie, so there ya have it, I will make it or break it !!!


Ingredients

12 oz. pork tenderloin, sliced crosswise in 8 pieces
1 egg
2 Tbsp. honey
1 cup finely chopped pecans
2 Tbsp. cooking oil
1 small green apple
1-1/2 cups shredded broccoli (broccoli slaw)
1/4 cup mayonnaise
8 small buns or dinner rolls(whole grain of course), split
Dijon-style mustard (optional)


Directions

1. With palm of hand flatten pork slices to 1/4 inch thickness. In shallow dish whisk together egg and 1 tablespoon of the honey. In another shallow dish combine chopped nuts, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Dip pork in egg mixture then nut mixture, pressing to coat.

2. In 12-inch skillet heat oil over medium-high heat. Cook pork in hot oil 2 to 3 minutes per side, or until golden and slightly pink in centers.

3. Meanwhile, for slaw, quarter apple, remove core and seeds; thinly slice. In bowl combine apple, shredded broccoli, mayonnaise, and 1 tablespoon honey. Season with salt and pepper. For sliders, place pork on buns or rolls; top with slaw. Pass mustard. Makes 4 servings (two sliders each).

It's day 5....

Summer sippers !!!
















Ingredients

12 sprigs fresh lemon verbena or the peel of 1 lemon*
4 sprigs fresh mint
4 cups boiling water

Directions

1. Place fresh herbs in a warm teapot. Add boiling water. Steep for 3 minutes; serve warm. To serve chilled, remove herbs and mint sprigs with a slotted spoon; refrigerate. Makes 6, (6-ounce) servings.

*Test Kitchen Tip: Use a vegetable peeler to remove the lemon peel in strips. Scrape any white pith off the lemon peel strips.

I have made it thru three days of the two week killer beginning of South Beach !! Honest no cheating, yet !!! I can do this !!!

Apple Spinach Salad with Thyme-Dijon Vinaigrette

Carb choices: 1 With only 53 calories and 1 carb per tablespoon, Thyme-Dijon Vinaigrette is a great healthwise choice for drizzling over any tossed salad.
CARB GRAMS PER SERVING: 11


4 cups fresh baby spinach
1 medium green-skinned apple (such as Granny Smith), cored and sliced
1/4 cup thin wedges red onion
2 tablespoons snipped dried tart red cherries
1/4 cup Thyme-Dijon Vinaigrette (below)
1/2 cup crumbled feta cheese or blue cheese (2 ounces) (optional)

1. In a large bowl, toss together spinach, apple, onion, and dried cherries. Drizzle with Thyme-Dijon Vinaigrette. Toss gently to coat. If desired, top individual servings with cheese. Makes 4 (about 1-cup) servings.

2. Thyme-Dijon Vinaigrette: In a screw-top jar, combine 1/4 cup olive oil; 1/4 cup white or regular balsamic vinegar; 2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed; 1 teaspoon Dijon-style mustard; and 1/4 teaspoon salt. Cover; shake well to mix. Chill for up to 1 week. Shake before serving. Makes 2/3 cup.

3. Make-Ahead Directions: Prepare the vinaigrette as directed. Cover and chill for up to 1 week.

Today is the day !! South Beach here I come !!










Keeping a log of eating and activity habits has long been considered the gold standard for effectively encouraging behavior change in relation to weight control and other health goals. Studies repeatedly show that people who monitor food and exercise most consistently tend to be most successful in changing their habits.

The success associated with record keeping could be attributed to the greater awareness that develops after detailed notes are taken. Or, perhaps the people most diligent about record-keeping are simply most motivated to change behavior. Either way, research and technology now offer multiple strategies to make it easier for people to monitor their habits.


Making your own food diary

A standard food record includes a list of everything you eat and drink throughout the day. Since it̢۪s the details that affect the nutritional content, the record also asks for information related to how the food is prepared, the portion size, and the time and location of the meal.

More detailed food logs may require you to record the calories, fat or other nutritional content of your food choices. If the goal is to become more aware of the impact of your emotions on eating, you might also be asked to make note of your mood each time you eat.

Despite such copious record keeping, getting an accurate account of your daily intake remains tricky. The constant logging is time-consuming, and it̢۪s easy to miss the little bites of food scattered throughout the day. Furthermore, most people significantly underestimate their portion sizes.



Diet logs simplified
A recent study published in 2007 in the Journal of the American Dietetic Association suggests an alternative if such detailed record keeping turns you off. As part of a 16-week weight loss program, half of the participants were asked to keep a detailed log of eating and exercise habits for the full length of the program, while half were asked for detailed records for only the first eight weeks and then transitioned to simpler, check-off type records.

Those who completed more records lost more weight, but weight loss did not differ based on the type of record. Researchers concluded that it may be the act of self-monitoring that matters most.

Another alternative is to record only those behaviors related to a particular habit you want to change. If you want to boost your vegetable intake, for example, you might create a refrigerator chart and make a check mark for each standard serving you eat each day. If snacking is your downfall, try logging what you eat and drink between meals, perhaps noting whether you were bored, stressed or truly hungry. If you don’t get in a walk as often as you intend, “X” off each day that you do on your calendar.

Okay I have made a commitment !!!!!

Okay, I don't mean I have had myself placed in a facility (at least not yet), but a commitment to Hill to try and get healthy!! Darn she wants me around for a while, what's that about??? So we are going to do the South Beach diet again. It is really just living the word of wisdom, and actually very easy to do. I lost 60 lbs last time!! There is just one catch for the first two weeks you have to take yourself off of carbs except for those which come from veggies !! Two Weeks !! So I may truly be in a facility, will you come and visit me !! lol I thought I'd start by posting a healthy recipe?? Just to get myself worked up to the challenge!! Cuz we decided we have to eat all of the bad carbs we have here first !! Can't afford to throw them out ya know !! hehe So it is soon if you see me frowning you'll know I'm cold turkey off the chocolate !!! Yikes and double Yikes !!!! Pity the fool who cuts in front of me now !! hahahaha does that sound maniacal?? Scary !!!


Citrus Chicken Salad

6 ounces cooked chicken breast, shredded, or one 6-ounce package refrigerated cooked chicken breast strips*
2 cups fresh baby spinach
1 11-ounce can mandarin orange sections, drained
1/2 cup loose-pack frozen whole kernel corn
2 tablespoons white wine vinegar or cider vinegar
1 tablespoon Dijon-style mustard
2 teaspoons snipped fresh oregano or 1/2 teaspoon dried oregano, crushed
2 teaspoons low-sugar or low-calorie orange marmalade
2 teaspoons salad oil
1/8 teaspoon salt
1/8 teaspoon ground black pepper

1. Divide chicken between two small resealable freezer bags; freeze overnight.

2. Divide spinach, mandarin oranges, and corn between two airtight storage containers. In a screw-top jar, combine vinegar, mustard, oregano, orange marmalade, oil, salt, and pepper; cover and shake well. Divide dressing mixture between two small resealable plastic bags. Chill salads and dressing overnight.

3. For each serving, pack a salad container, a bag of dressing, and a bag of chicken in an insulated lunch box with an ice pack. Serve within 5 hours.

4. Just before serving, add the dressing and chicken to the spinach mixture. Toss to coat. Makes 2 servings.

5. *Test Kitchen Tip: If using the packaged refrigerated cooked chicken breast strips, omit the 1/8 teaspoon salt from the dressing.

Sloppy Chicken Joes !!


I have to have someone over to try these out ?? Who will come to dinner??




Ingredients


Nonstick cooking spray
3 pounds uncooked ground chicken or uncooked ground turkey
2 14-oz. jars pizza sauce
2 cups frozen (yellow, green, and red) peppers and onion stir-fry vegetables, thawed and chopped
1 14.5-oz. can diced tomatoes
8 hoagie rolls, split
8 slices mozzarella or provolone cheese (8 ounces)

Directions

1. Coat a large skillet with cooking spray. Heat skillet over medium-high heat. Add chicken to hot skillet; cook until chicken is no longer pink, stirring to break apart. In a 3-1/2- or 4-quart slow cooker, combine chicken, pizza sauce, vegetables, and undrained tomatoes.

2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.

3. Arrange split rolls, cut sides up, on an unheated broiler pan. Broil 3 to 4 inches from the heat for 1 to 2 minutes or until toasted. Spoon chicken mixture onto bottoms of toasted rolls. Top with cheese and roll tops. Makes 8 sandwiches.

Sassy Water


This water is supposed to be good for you, and help you lose belly fat? It's from the flat belly diet !!! It is also supposed to help you to not retain water which I do this time of year. So I plan to give it a try, we'll see what happens.

COMBINE EVERYTHING AND LET IT STAND IN FRIDGE OVERNIGHT. DRINK ALL WATER THROUGHOUT NEXT DAY

Does the flu count?





Here's the good news, the week before last I had the flu really bad, let's just say it's the best I've done on my diet in quite a while !! I didn't get out of bed from Wednesday to Saturday !! But the good news is I lost 7 lbs !!

Now for the bad news, this weekend we went to Cambria for a little R&R, can I just say I am not in any hurry to get on the scales this week !!!

But I am going to put the blame where it belongs on Linn's restauarant in Cambria !! They did it to me, yeah it's their fault, they make the best breakfasts and desserts it is really a crime they are so good... SO if you find your self in Cambria stay away from these guys or you're in for trouble at the scales, sigh :( .... LOL

Okay it didn't have it's own zip code, but it was close !!!



In Texas the food is awesome. Period. I was only really bad once and I thought I was going to die, cuz I ate the whole chicken fried steak !!! This one had chipotle cream gravy on it !! and the mashed potatoes were spicy too !! I am glad I ate it early in the trip cuz it cured me for the rest of the trip, I did not want to feel like that again !! Texas also has awesome brisket !! Tho we didn't manage to find a true barbeque restaurant the whole trip?? It was almost like a weird trip into the twlight zone, no barbeque in Texas, yeah right !!! Maybe we just thought we were in Texas?? hmmm

I will be in Texas this week, I am praying I will be able to maintain there ?? Ha this is the state where the chicken fried steak comes out to your table with it's own zip code, and it is delisshhh!! Also it is the south sort of and they have fried corn?? Oh can I just say you haven't lived until you have eaten a corn on the cob on a stick covered in batter and fried !! Yes Texas is the heart attack on a plate state !!! Well wish me well, just cuz they have all those good eats doesn't mean I have to eat them... hahaha well it sounded good !!!! (the hotel has what they call a "cookie bar" at 8pm every night for all of their guests... to those of you who know me, cookies are one of my things) I'm in so much trouble !! LOL

Eat more fruit !!!



So, I grocery shopped tonight, and I bought lots of fruit !! I'm praying I can pretend the apples and bananas are just as good a chocolate. I realize you can have chocolate in moderation, unfortunatley I don't know how to eat it in moderation !! I either have to resist totally or I'll eat all I can !! I'd rather eat chocolate and not eat food !! I have done that many times, not eat a meal cuz I have eaten chocolate??? It's a sad state of affairs...

Why is this not as enticing as chocolate?



Why does this picture not even make me want to run right out and make myself a big ole salad????? If it were a picture of chocolate I'd have my car keys in hand !! LOL

Always on my mind, and not the song....


It is always on my mind in one way or another?? Food. Do I love it or hate it??? It depends on how my day is going. Today I worked really productively and was sticking to it ( my resolution to eat healthy)... but of course I had to talk to my ex-husband and that's where it ended !!!
I had another really Cr---- (pick which word) end of the day, hard to believe I know!!! But I really want to take control of my life back, 31 years of stress eating has taken it's toll, I want to stop eating when I'm upset, cuz it doesn't look like I'm going to stop being stressed out any time soon !!
Why couldn't I be one of those people who forgets to eat, and when they're upset they can't eat?? What's that about, who forgets to eat, and who has a problem food can't solve ????? hmm Obviously not me, at least not today.... LOL

This is the way I read the scale, it is less offensive then. If you only look with one eye it seems to make it easier to bare !! Sort of like you're sneaking up on it !! I wonder how much that towel weighs? hmm...

Okay this picture made me decide to get serious !! It is too funny that these people are sitting in chairs to exercise !!! In what appears to be a day care setting?? Is this what they do to you when you retire?? If so I may not retire after all. Cuz if there is an option where they ship you to day care everyday and you do exercises in chairs, it will be my lot I'm sure !! Scary is all I have to say. And maybe I should have been nicer to Hill since she'll be picking my daycare center !! LOL

Today was not totally bad, well ...


Okay I did better today but... today was a day of hearings with taxpayers !!! So by afternoon I was looking for a treat, I actually took a bag of baby carrots to work and ate them !! How proud I was until the 2 chocolate eggs fell into my mouth !! But even with that it was better than most days !! So I think I'm going to do this yet !! LOL

I love junk food. Sad but true ... The best relationship I've had (other than with my daughter) is with food... it has been there when ever I needed it to be. Hopefully I can transition into a healthy adult who doesn't need food to feel good ... Okay right !! LOL
